Ingredients
- 1/2 cup Meadow Gold® cottage cheese
- 1/4 cup peanut butter, divided
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup sweetened whipped cream, plus extra to serve
- 1/4 cup chocolate chips
- Chopped peanuts for topping
How to
- Blend cottage cheese, 2 tablespoons peanut butter, powdered sugar, and vanilla in a mini food processor or blender for about 1 minute or until smooth and slightly fluffy, scraping down sides of bowl halfway through
- Add whipped cream and pulse a few times, until just incorporated. Refrigerate 30 minutes
- While peanut butter filling is chilling, melt chocolate chips and remaining peanut butter in the microwave in 10-second intervals, stirring in between, until smooth and melted
- Spoon half of the chocolate peanut butter mixture into the bottom of two small jars or ramekins, swirling some up on the sides
- Refrigerate 5 minutes. When chocolate peanut butter shell has hardened up, divide peanut butter mousse filling between the jars
- Top with remaining chocolate peanut butter mixture, a dollop of whipped cream, and a sprinkle of chopped peanuts
- Chill for another 5 minutes, serve, and enjoy!
Notes: This recipe can easily be doubled or tripled for a crowd. They are also great frozen!
